i think "Limit Posts" resets all the privacy on all previous posts...then you would have to set up your default going forward using the cog option.

Yes, use Limit Posts to reset privacy on past posts but only to friends. You can't hide them selectively. No idea about the photo question. You can limit who can see your photos, but to my knowledge...
